Spicy coriander chicken bake

The first time I had a chicken bake it was from a high-street bakery chain, the place where I went to get my lunch every day when I worked in retail. Now my son loves them too, so I decided to transform a plain chicken bake into this spicy coriander version: it is absolutely delicious.

MAKES 4

2 tablespoons sunflower oil

1 bird’s eye green chilli, finely chopped

2 chicken breasts, cut into 1cm (½ inch) pieces

½ teaspoon chilli powder

½ teaspoon freshly ground black pepper

pinch of salt

100ml (3½floz) chicken stock

3 tablespoons double cream

10g (¼oz) fresh coriander leaves, finely chopped

2 tablespoons cornflour

plain flour, for dusting

320g (11½oz) packet of ready-rolled puff pastry

1 egg, lightly beaten

Heat the oil in a saucepan and add the chilli, followed by the chicken. Cook over a medium heat for 2 minutes. Add the chilli powder, pepper and salt and mix well. Pour in the stock, cover and cook over a low heat for 2–3 minutes until the chicken is cooked.

Mix in the cream and coriander leaves. Mix the cornflour in a small bowl with 2 tablespoons of cold water to form a paste. Add this to the pan and stir until the mix has thickened. Set aside to cool completely.

Preheat the oven to 200°C (400°F), Gas Mark 6. Line 2 baking sheets with nonstick baking paper.

Unroll the pastry on a lightly floured work surface and cut it into 4 portions. Put one-quarter of the chicken mixture on one half of each portion and brush the pastry edges with egg . Fold the pastry over to cover the filling and seal the parcels by pressing a fork on the border to seal them well.

Place the parcels on the prepared baking sheets and brush all over with the remaining egg . Bake for 20–25 minutes until crispy and golden and serve warm.
